It’s a wonderful story, and an even more wonderful olive oil. Phil Mather and his team harvest wild South Australian olives and produce this incredible product, with one foot firmly in the corner of the environment.
Olive trees, while they look appealing and produce a useful foodstuff, are both abundant and alien to the Australian landscape. The product is early-harvest, piquant oil best on its own or – at most – dressing a salad. Cooking with it would be a travesty.
